TECHNOLOGICAL FEATURES OF PECTIN-BASED COATINGS TO EXTEND THE SHELF LIFE OF FRUIT AND VEGETABLE PRODUCTS

Abstract. This article explores the technological properties of pectin-based coatings to extend the shelf life of fruit and vegetable products. The study found that pectin-based coatings reduce fruit-vegetable respiration rates, reduce moisture loss, and slow down the growth of microorganisms. These coatings are environmentally friendly and safe for consumers, allowing a significant extension of the shelf life.
